Beans take a variety of spices wonderfully. The Middle Eastern restaurant
down the street makes fava beans with tons of garlic (healthful in other
ways), olive oil, red pepper, and lemon juice. You can also use cumin,
onions, oil and vinegar, thyme, etc. It is helpful to combine the fava beans
with other beans and rice or pasta in a salad-type dish. The more fresh,
crunchy, and acidic elements you can combine with fava beans, the better they
are. You need to somehow counteract the awesome pithiness of them.
I would be interested in hearing more about the possible benfits of fava
beans for PD. Could you cite your sources? I am a new subscriber to the
list--my sister (38) is a young onset victim of PD and I am trying all
possible avenues of information, particularly those that deal with
alternatives to medication.
Thanks, and thanks to all of you. I've been very heartened and moved by your
stories and information.

File this under, 'How Bad Can They Be??' :)

Based on readings here and elsewhere, after looking near and far we found an
purchased 2 1/2 lbs of fava beans hoping to unleash the dopamine contained
therein. We then found ourselves at a complete loss as to how to fix them
but JR likes beans (pinto, white, etc) so we figured how bad could they be?
Well, for those of you who would also like to try fava beans, trust us, we
need to find or develop recipes!
If any of you have any recipes for fava beans or if you have ideas on how to
fix them PLEASE email us asap. Thanks.

P.S. My mother used to eat them as a little girl (in her Italian family) but
can't remember how they were fixed.
