Allow me to recommend either soy or rice milk. Either is much lower in
protein (less than half) than cow's milk, and most people find the taste
quite acceptable, especially on breakfast cereal, milkshakes, and in
cooking. Be sure to get the kinds that are fortified with calcium and
vitamin D, it will then have close to the same nutrient profile as cow's
milk.

Actually, there are excellent vegetarian sites on the 'net, and I'm
sorry I haven't bookmarked them. You can easily do a search, though, and
get tons of excellent recipes for free. Also, the Moosewood series has
just come out with a new low-fat book which has gotten excellent
reviews. And Cooking Light magazine has wonderful recipes, too, though
not necessarily vegetarian. Their website is:

But one way to cheat is to eat a one-ounce serving of meat at a sitting,
with large quantities of starches, vegetables, and fruits. This ups the
ratio of carb to protein, which is mainly what your doc is getting at (I
think).
