Either is much lower in protein (less than half) than cow's milk, and most people find the taste quite acceptable, especially on breakfast cereal, milkshakes, and in cooking. You can easily do a search, though, and get tons of excellent recipes for free. Also, the Moosewood series has just come out with a new low-fat book which has gotten excellent reviews. And Cooking Light magazine has wonderful recipes, too, though not necessarily vegetarian. This ups the ratio of carb to protein, which is mainly what your doc is getting at (I think).
