Just wanted to pass on a couple of books.
1.  The American Vegetarian Cookbook from the Fit for Life Kitchen by Marilyn
Diamond.  Definitely has some cheese recipes but lots and lots without and
many milk substitute ideas.  I think you'll like it.
2.  Macrobiotic Family Favorites by Aveline Kushi and Wendy Esko.  No cheese
at all.
