#1 (Wales-Ireland--old recipe) Bubble & Squeak 3-4 unpeeled potatoes-boiled 4 cups cabbage-chopped & blanched 1/2 med yellow onion-peeled & chopped 1 (smallish) zucchini-grated 4-5 slices bacon-browned & chopped. Save the fat!! 1/2 cup chopped ham fresh ground pepper to taste (salt) Mash the potatoes with your hands-don't mash them too much-just smash them up. Add the rest of the ingredients except for the reserved fat. Toss gently to mix. Heat (preferably) teflon or silverstone frying pan. Place bacon fat in pan...press potato mixture on top. Brown over medium heat until golden brown on bottom (about 1/2 hour). Invert on plate & serve. -- #2 Bubble and Squeak A traditional country recipe, bubble and squeak brings back childhood memories. It has justifiably found its place in English cookery, being tasty and satisfying food at the lowest possible cost. Large old potatoes, 350 g (12 oz) peeled Unsalted butter, 40 g (1½ oz) softened Milk, 150 ml (¼ pint) Leftover cooked Brussels sprouts or spring-greens, 175 g (6 oz) chopped Vegetable oil, 1 tbs Salt, pepper and grated nutmeg Cook the potatoes in salted boiling water for 15-20 minutes until soft and mushy. Drain. Mash the potatoes thoroughly with the butter and milk, and fold in the prepared greens. Season liberally with salt and pepper and grated nutmeg. Grease a large, heavy-bottomed pan with the oil, heat it gently and then pack the mixture into the pan. Cover with a lid and cook over a gentle heat for 20-30 minutes until the underside is completely browned and crisp.
