How about taking the door off of one of your lower kitchen cabinets and using that space for your knees while sitting on a bar stool? Of course, that means having one less cabinet to store stuff. I use to work in a lab and we had knee desks. In other words the counter would periodically have a space underneath where the tecnician could place his/her wheeled bar stool when not used as a desk. You would have to look in a lab catalogue like the Fisher catalogue. Needless to say, it would cost a pretty penny but it's a thought.
